We do not have the ability to charge a no show or penalty fee at this moment in time but we will look at this in the future. If applicable to your terms, you can, however, send the customer an invoice for the amount due from your Stripe dashboard which they can settle to you directly.
You can, of course, require payment at booking and apply a stricter cancellation policy in lieu of this. For example, you could decide that you will only apply credit backs to those cancelling X hours before a class start time, but not to someone cancelling Y hours before the class start time. This can be achieved by using either a manual cancellation policy or the Auto-refund bolt-on.
